Butchery apprentice, Craig Henderson, achieved a distinction in his Level 3 Advanced Butcher apprenticeship following on from his Pass with Excellence at Level 2!
Our butchery trainer, Chris, who used to work along side Craig at Walter Smith said:
“Craig joined Water Smith back in 2015 as a fine food assistant after previously working as a wet food supplier. He always had a passion for hunting, cooking, eating and preparing meat so Butchery was the perfect job for him!
7 years later and Craig has completed not only his Level 2 but also his Level 3 Advanced Butchery Apprenticeship, achieving top grade in both of these. During his time on Level 3 Craig was promoted to assitant manager. Following this with his impressive attitude and enthusiasm senior members of WSFF found it only correct for Craig to become manager of the Huntingdon store. This was proven with the increased profit margin and now helps the team at Huntingdon turn over £750,000 anually.
Not only is Craig fantastic at butchering Beef, Pork, Lamb, Chicken, Venison, Partridge and Phesant he has also developed his skills in specialist and artisan butchery helping him created unique value added products for his organisation.
Craig loves creating and cooking new recipies which in turn has helped develop his skills in cooked products such as making and baking lots such as pies, lasagnes, cottage/shepherds pies, scotch eggs and much more!
I’m so proud of seeing Craig develop throughout his career and apprenticeships he was always a pleasure to teach.
I wish him the best of luck in his next amition of completing his master butcher qualification.”
